We’ve long been fans of Maria Bradford’s brilliant, bold and flavour-packed food – and now she’s bringing it to Well Court, Sevenoaks, where her restaurant, Shwen Shwen by Maria, opens this month.
Also known for her cookbook Sweet Salone: Recipes from the Heart of Sierra Leone and her role as a judge for the prestigious Fortnum & Mason Food & Drink Awards, Maria continues to redefine fine dining with her distinctive take on Afro-fusion cuisine. She’ll be blending authentic Sierra Leonean tradition with contemporary influences, so expect dishes such as plantain and pie, roasted tomato salsa, whole prawns, salone fire butter & burnt lemon gel and beef short rib, peanut sauce, koni & spring onion.
Says Maria: “Shwen Shwen is the realisation of a long-held dream for me that takes guests on a journey to experience the vibrant culinary landscape of Sierra Leone. Though my restaurant is in Sevenoaks, every dish is a love letter to my heritage.”
